Post-war apple pudding for #sundaysupper Retro Recipes.

England, 1945. The War is over, but the rationing was an everyday affair, and there was not an increase of the amount of the rationed food, such as butter, fats, eggs or sugar.





This recipe is from Marguerite Pattern's book "Post-war kitchen". I bought it douring our british honeymoon and it's amazing, it concentrates on the decade after the end of the Second World War. The book includes short extracts from newspapers of the time, accompanied by outstanding contemporary pictures.


Norfolk pudding
(4-6 helpings)

For the batter:

115 g. flour.
1 fresh egg (the book also explains how to do it with dried eggs).
300 ml. milk (or milk and water).

For the fruit base:

15 g. fat (I used margarine)
450 g. cooking apples.
2 tablespoons of dried fruits (sultanas)
50 g. of sugar.

1. For the batter: sift the flour with the egg.
2. Preheat the oven to 220º/425ºF. Put the fat in a large pie dish and heat for a few minutes. 
3. Peel, core and tiny slice the apples. Add to the hot fat in the dish, with the dried fruits and the sugar. Mix well, cover the dish and return to the oven for 5 minutes. 
4. Uncover the dish, puor the batter over the fruit and bake for 25-30 minutes, until well risen and brown.
5. Top with sugar and serve at once.

  9. A cook book with so much history in it, I would love that. I love pudding recipes like this that are easy to put together with a few ingredients so I will have to give this one a try soon.
